A Paris-Brest in celebration of Tour de France

Hello readers! I’ve got some good news to share. I received my 1-year working holiday visa in France today. I’m amazed at how simple and speedy this whole process was. I went to the French Embassy in Vancouver on Thursday for my appointment. During my meeting, the visa officer looked over my documents and told me everything was good and that I could pick up my passport with the visa stamp the next day.

Another convenience about the France-Canada Youth Exchange Agreement is that you don’t need to apply for a carte de sejour (residence permit) upon your arrival. That saves you the trouble booking an OFII appointment (medical exam). I guess it’s time to book my flights!

In celebration of the Tour de France that is coming to an end on the Champs-Élysées this weekend, I made a Paris-Brest. My lucky friends in Paris will get to watch it live and celebrate with the crowds. If only I was still in Paris! Oh well, at least I’ll get to enjoy some Paris-Brest. We learned how (click for link to previous post) to make one back in school. This time, I made a more classic version with just praline cream inside the pâte à choux with crumble.

Here is the pâte à choux (dough) before going in the oven. The pâte à choux is made from milk, butter, eggs, and flour. The crumble (circles on top of the pâte à choux) is equal parts butter, flour, and coarse sugar. The Paris-Brest is traditionally made in a large ring.

After baking, I cut the top off and fill with a rich praline buttercream and put the caps back on.

I also made lots of mini individual choux with the extra batter and praline cream. No crumble on the little guys.
